Client: Large Foodservice Operations
Need: Turnaround
Problem: When a company feeds over 10,000 patrons per day, operations must run like clockwork. But this wasn’t always the case with our client’s business. Operations were experiencing annual cost overruns of close to $1 million, and a new restaurant opening was projected to be delayed by six months.
Solution: Miick and Associates was brought in to solve these problems and when fixed, help the company develop new revenue streams. First, we worked with senior management to redefine their vision and profit goals. Second, since improved execution was the primary focus, we then developed an operational plan that set goals for all management and supervisory levels. We implemented new budgeting, costing and purchasing processes. We trained all staff and helped the company negotiate new contracts with seven separate labor unions. Finally, we helped our client identify and develop new business ventures.
Results: Within on year, Miick & Associates helped turn operations around:
-
The new project opened on time
-
All union contracts were negotiated favorable, with cost reductions to the company
-
Cost savings resulting from renegotiated supplier contracts
-
Generated new income of over $1M from new foodservice operations, including on-site catering and coffee service.
